Red Lentil Dhal

Ingredients:

The base:

  • Red Lentils
  • Water
  • Milk or Coconut Milk
  • Tomato Paste

The veggies:

  • Onion
  • Garlic
  • Chives
  • Spinach
  • Tomato

The spices:

  • Tumeric
  • Paprika
  • Curry Powder
  • Cayenne
  • Coconut flakes
  • Salt and Pepper

Directions:

  • Soak the lentils.
  • Saute the onion and garlic.
  • Cook the lentils with the coconut milk.
  • Add the spices and the onions. Stir.
  • When the lentils are soft add the tomato paste.
  • Stir in the spinach and tomato and serve.

    Thanks for this recipe! I just got some red lentils at Coto and have been putting off cooking them bc I had to search for a recipe..but now I have no more excuses šŸ™‚ Any idea where to buy coconut milk or even coconut oil?
